Ingredients
  

Meatloaf
  • 2 lbs ground beef 80/20 lean
  • 1 cup breadcrumbs Italian or Panko
  • 0.5 cup milk
  • 1 cup parmesan cheese grated
  • 1 small onion finely diced
  • 4 cloves garlic minced
  • 2 large eggs
  • 2 tbsp fresh parsley chopped
  • 1 tsp Italian seasoning
Garlic Parmesan Sauce
  • 0.25 cup unsalted butter
  • 2 tbsp all-purpose flour
  • 3 cloves garlic minced
  • 1.5 cups heavy cream
  • 0.5 cup parmesan cheese grated

Equipment

  • Large mixing bowl
  • Loaf pan or baking sheet

Method
 

  1. Preheat oven to 375°F (190°C) and prep baking dish.
  2. Soak breadcrumbs in milk for 5 minutes.
  3. Mix beef, soaked crumbs, 1 cup parmesan, onion, garlic, eggs, and seasonings until just combined.
  4. Form into a loaf and bake for 50-60 minutes until internal temp reaches 160°F.
  5. For sauce: Melt butter and sauté garlic. Whisk in flour and cook for 1 min.
  6. Slowly whisk in cream and simmer until thickened. Remove from heat and stir in cheese.
  7. Pour sauce over rested meatloaf and serve.

Notes

Letting the meatloaf rest before slicing prevents it from crumbling. Use freshly grated parmesan for the smoothest sauce.
