Ingredients
  

Potato Wedges
  • 4 large Russet potatoes scrubbed clean, skin on
  • 1/4 cup Extra virgin olive oil
  • 1/2 cup Parmesan cheese freshly grated, plus more for garnish
  • 1 tablespoon Garlic powder
  • 1 teaspoon Paprika sweet or smoked
  • 1 teaspoon Kosher salt or to taste
  • 1/2 teaspoon Black pepper freshly cracked
  • 2 tablespoons Fresh parsley finely chopped, for garnish

  • Parchment paper
  • Large mixing bowl

Method
 

  1. Preheat your oven to 400°F (200°C). Position a rack in the lower third of the oven. Line a large rimmed baking sheet with parchment paper.
  2. Cut the potatoes in half lengthwise, then cut each half into 3 or 4 wedges depending on the size of the potato. Try to keep them uniform in size.
  3. Optional but recommended: Soak the wedges in hot tap water for 10 minutes to remove starch. Drain and pat the potatoes completely dry with paper towels.
  4. In a large mixing bowl, whisk together the olive oil, grated parmesan cheese, garlic powder, paprika, salt, and black pepper to create a thick paste.
  5. Add the dried potato wedges to the bowl and toss vigorously until every wedge is evenly coated with the oil and cheese mixture.
  6. Arrange the wedges on the prepared baking sheet in a single layer, resting on one of their cut sides. Ensure there is space between each wedge so they roast rather than steam.
  7. Bake for 25 minutes. Remove from the oven and carefully flip each wedge onto its other cut side using tongs or a spatula.
  8. Return to the oven and bake for an additional 15 to 20 minutes, or until the potatoes are golden brown, crispy on the outside, and fork-tender on the inside.
  9. Remove from the oven and immediately sprinkle with additional freshly grated parmesan cheese and chopped fresh parsley. Serve hot with your favorite dipping sauces.

Notes

To reheat leftovers and maintain crispiness, place the wedges in an air fryer at 375°F (190°C) for 3-5 minutes, or in a 400°F (200°C) oven on a wire rack for 8-10 minutes. Do not microwave.
