Method
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Mix melted butter, flour, brown sugar, and cinnamon in a small bowl with a fork to make crumbs. Set aside.
- In a medium bowl, whisk flour, baking soda, cornstarch, salt, and cinnamon.
- Cream softened butter and both sugars until light and fluffy (approx 2 mins).
- Add egg and vanilla to the butter mixture and beat until combined.
- Gradually add dry ingredients, mixing on low until just combined.
- Scoop dough into balls. Make an indent in the top and pile generously with streusel crumbs.
- Bake 11-13 minutes until edges are set. Cool on pan for 5 minutes.
- Whisk glaze ingredients until smooth and drizzle over slightly cooled cookies.
Notes
Add 1 tsp of instant espresso powder to the dough for a true coffee lover's twist.
