Gilmore Girls Coffee Cake Cookies

Ingredients
  

Streusel Topping
  • 0.25 cup unsalted butter melted
  • 0.33 cup all-purpose flour
  • 0.33 cup brown sugar packed
  • 1 tbsp cinnamon
Cookie Dough
  • 0.75 cup unsalted butter softened
  • 0.5 cup brown sugar packed
  • 0.5 cup granulated sugar
  • 1 egg large
  • 2 tsp vanilla extract
  • 2.25 cups all-purpose flour
  • 1 tsp cornstarch
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 0.5 tsp cinnamon
Glaze
  • 1 cup powdered sugar
  • 1.5 tbsp milk or cream
  • 0.5 tsp vanilla extract

Equipment

  • Stand mixer or hand mixer
  • Baking sheets
  • Wire rack
  • Whisk

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Mix melted butter, flour, brown sugar, and cinnamon in a small bowl with a fork to make crumbs. Set aside.
  3. In a medium bowl, whisk flour, baking soda, cornstarch, salt, and cinnamon.
  4. Cream softened butter and both sugars until light and fluffy (approx 2 mins).
  5. Add egg and vanilla to the butter mixture and beat until combined.
  6. Gradually add dry ingredients, mixing on low until just combined.
  7. Scoop dough into balls. Make an indent in the top and pile generously with streusel crumbs.
  8. Bake 11-13 minutes until edges are set. Cool on pan for 5 minutes.
  9. Whisk glaze ingredients until smooth and drizzle over slightly cooled cookies.

Notes

Add 1 tsp of instant espresso powder to the dough for a true coffee lover's twist.
