Ingredients
  

The Dry Mix
  • 4 cups Rice Chex cereal or generic rice squares
  • 3 cups popped popcorn plain or sea salt
  • 2 cups gluten-free pretzels twists or sticks
  • 1 cup roasted peanuts salted
The Coating
  • 20 oz white chocolate chips or almond bark
  • 1 tbsp coconut oil optional, for smoothness
  • 1.5 cups M&Ms red and green holiday mix
  • 0.25 cup powdered sugar optional garnish

Equipment

  • Microwave-safe bowl
  • Baking sheets
  • Parchment paper

Method
 

  1. Line two large baking sheets with parchment paper or wax paper.
  2. In a very large bowl, combine Rice Chex, popcorn, gluten-free pretzels, and peanuts.
  3. In a microwave-safe bowl, melt white chocolate chips (and coconut oil if using) in 30-second intervals, stirring in between, until smooth.
  4. Pour the melted chocolate over the dry mixture. Fold gently with a spatula until evenly coated.
  5. Let cool for 2 minutes, then fold in the M&Ms.
  6. Spread mixture onto prepared baking sheets in a single layer. Sprinkle with powdered sugar or sprinkles if desired.
  7. Allow to set completely (approx 30 mins) before breaking into chunks.

Notes

Always verify ingredients are certified gluten-free. Store in airtight container for up to 2 weeks.
