Ingredients
  

Base & Toppings
  • 1 sheet puff pastry thawed but cold
  • 4 oz goat cheese log chèvre, chilled
  • 3 tbsp honey or hot honey for a kick
  • 1 tbsp fresh thyme leaves
  • 1 egg large, for egg wash
  • 1 tsp water
  • 1 tbsp walnuts crushed (optional)
  • 1 pinch flaky sea salt

Equipment

  • Baking sheet
  • Parchment paper
  • Round cookie cutter
  • Pastry brush

Method
 

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. Unroll the puff pastry on a lightly floured surface. Using a round cutter, cut out 9-12 circles. Transfer to baking sheet.
  3. Lightly score a smaller circle inside each pastry round using a knife (don't cut through) to create a rim.
  4. Whisk egg and water. Brush the outer rim of each pastry circle with egg wash.
  5. Slice the goat cheese log into rounds and place one slice in the center of each pastry circle.
  6. Bake for 15-20 minutes until the pastry is puffed and deep golden brown.
  7. Remove from oven. Immediately drizzle with honey, sprinkle with thyme, crushed walnuts, and sea salt. Serve warm.

Notes

Ensure your puff pastry is cold before baking to get the best rise.
