Method
- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- Unroll the puff pastry on a lightly floured surface. Using a round cutter, cut out 9-12 circles. Transfer to baking sheet.
- Lightly score a smaller circle inside each pastry round using a knife (don't cut through) to create a rim.
- Whisk egg and water. Brush the outer rim of each pastry circle with egg wash.
- Slice the goat cheese log into rounds and place one slice in the center of each pastry circle.
- Bake for 15-20 minutes until the pastry is puffed and deep golden brown.
- Remove from oven. Immediately drizzle with honey, sprinkle with thyme, crushed walnuts, and sea salt. Serve warm.

Ensure your puff pastry is cold before baking to get the best rise.
