Ingredients
  

For the Grilled Cheese
  • 2 slices Quality Bread (sourdough, brioche, or artisan white)
  • 1 tbsp Unsalted Butter softened (or mayonnaise)
  • 2 ounces Fresh Goat Cheese crumbled or sliced (chevre)
  • 1 tbsp Honey
  • 0.25 tsp Red Pepper Flakes optional, to taste
  • pinch Salt

Equipment

  • Non-stick skillet
  • Heavy-bottomed saucepan

Method
 

  1. Prepare Bread: Butter one side of each bread slice (this will be the outside).
  2. Assemble Filling: Flip one bread slice (butter-side down). Sprinkle half goat cheese, drizzle half honey, sprinkle half red pepper flakes (if using), and a pinch of salt. Top with the other bread slice (butter-side up).
  3. Grill: Heat skillet over medium-low. Cook sandwich 3-5 minutes per side until golden brown and cheese is thick, gooey, and melted.
  4. Serve: Remove from heat. Drizzle with extra honey and red pepper flakes if desired. Slice and serve immediately while cheese is wonderfully thick and gooey.

Notes

Use quality bread for best results. Cook slowly over medium-low heat to ensure the goat cheese melts completely without burning the bread. Adjust red pepper flakes to your spice preference.
