- Grill Peaches: Grill peach halves for 3-4 minutes per side until charred. Chop coarsely.
- Make Syrup: Combine chopped peaches, sugar, and water in a saucepan. Simmer for 10-15 minutes until the liquid is reduced to a thick, viscous, gooey consistency.
- Strain Syrup: Cool and strain the syrup through a sieve, pressing down on the solids to extract all liquid.
- Dry Shake: Combine whiskey, lemon juice, peach syrup, and egg white (if using) in a shaker. Shake vigorously for 30 seconds without ice.
- Wet Shake: Add ice to the shaker and shake again for 15-20 seconds until chilled.
- Serve: Double strain into a chilled rocks glass with fresh ice. Garnish with a grilled peach slice.
Notes
If omitting the egg white, skip the dry shake and simply shake all ingredients with ice. The peach syrup can be stored in the refrigerator for up to two weeks.
