Method
- Pat shrimp dry with paper towels and toss in a bowl with olive oil, paprika, garlic powder, salt, and pepper.
- Heat a grill pan or skillet over medium-high heat. Sear shrimp for 2 minutes per side until opaque and charred. Remove and squeeze lemon juice over them.
- In a separate large bowl, toss the chopped romaine with Caesar dressing and parmesan cheese until well coated.
- Briefly warm each tortilla in a dry pan to make them pliable.
- Place a portion of the dressed romaine in the center of a tortilla, top with 5-6 shrimp, fold in the sides, and roll tightly.
- Optional: Place the wrap seam-side down in the hot skillet for 30 seconds to seal and add a crunch to the exterior.
Notes
To keep the wrap from getting soggy, always dry the lettuce thoroughly before adding the dressing.
