Method
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Toss potato cubes with olive oil, garlic powder, paprika, salt, and pepper. Spread in a single layer on the baking sheet.
- Roast for 30-40 minutes, tossing halfway through, until potatoes are tender inside and crispy on the outside.
- While potatoes roast, brown the ground beef in a skillet over medium-high heat. Drain excess fat.
- Add taco seasoning and water to the beef. Simmer for 3 minutes until thickened.
- Divide roasted potatoes into bowls. Top with the seasoned beef.
- Sprinkle cheese over the hot mixture immediately to melt.
- Garnish with sour cream, diced red onions, tomatoes, and cilantro before serving.
Notes
For a lower carb option, replace potatoes with roasted cauliflower florets.
