Ingredients
  

For the Ground Turkey
  • 1 tbsp Olive Oil
  • 1 pound Ground Turkey lean
  • 2 cloves Garlic minced
  • 1 tsp Ginger grated
  • 2 tbsp Soy Sauce
  • 1 tbsp Brown Sugar
  • 0.5 tsp Black Pepper
For the Bang Bang Sauce
  • 0.5 cup Mayonnaise full-fat for best results
  • 0.25 cup Sweet Chili Sauce
  • 1-2 tbsp Sriracha adjust to taste
  • 1 tsp Rice Vinegar
For the Bowls & Toppings
  • 3 cups Cooked Rice Jasmine or Basmati
  • 1 cup Cooked Edamame shelled
  • 1 cup Sliced Cucumber
  • 0.5 cup Shredded Carrots
  • 4-6 slices Radish
  • 1 medium Avocado sliced or diced
  • Green Onions (Scallions) sliced, for garnish
  • Sesame Seeds for garnish

Method
 

  1. Cook rice according to package directions. Set aside.
  2. Prepare all toppings (cucumber, carrots, radish, avocado, green onions).
  3. In a small bowl, whisk together all Bang Bang Sauce ingredients until thick and glossy. Set aside.
  4. Heat oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it up, until fully browned (6-8 mins). Drain excess fat.
  5. Stir in garlic and ginger, cook 30 seconds until fragrant. Stir in soy sauce, brown sugar, and black pepper, cook 1-2 mins.
  6. Remove from heat. Toss the turkey with half of the prepared Bang Bang Sauce until thoroughly coated. Reserve the remaining sauce for drizzling.
  7. Divide rice among 4 bowls. Spoon the coated turkey mixture over the rice.
  8. Arrange prepared toppings (edamame, cucumber, carrots, radish, avocado) around the turkey.
  9. Drizzle generously with the remaining Bang Bang Sauce. Garnish with green onions and sesame seeds. Serve immediately.

Notes

Substitute ground chicken or crumbled tofu for turkey. For a lighter sauce, use Greek yogurt instead of mayonnaise. The sauce and turkey can be prepped up to 4 days ahead for quick meal assembly.
