Method
- Cook rice according to package directions. Set aside.
- Prepare all toppings (cucumber, carrots, radish, avocado, green onions).
- In a small bowl, whisk together all Bang Bang Sauce ingredients until thick and glossy. Set aside.
- Heat oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it up, until fully browned (6-8 mins). Drain excess fat.
- Stir in garlic and ginger, cook 30 seconds until fragrant. Stir in soy sauce, brown sugar, and black pepper, cook 1-2 mins.
- Remove from heat. Toss the turkey with half of the prepared Bang Bang Sauce until thoroughly coated. Reserve the remaining sauce for drizzling.
- Divide rice among 4 bowls. Spoon the coated turkey mixture over the rice.
- Arrange prepared toppings (edamame, cucumber, carrots, radish, avocado) around the turkey.
- Drizzle generously with the remaining Bang Bang Sauce. Garnish with green onions and sesame seeds. Serve immediately.
Notes
Substitute ground chicken or crumbled tofu for turkey. For a lighter sauce, use Greek yogurt instead of mayonnaise. The sauce and turkey can be prepped up to 4 days ahead for quick meal assembly.
