Method
- Prepare the rice according to package instructions if you haven't already.
- In a small bowl, prepare the Bang Bang sauce by whisking together the mayonnaise, sweet chili sauce, and sriracha until smooth and creamy. Set aside in the refrigerator.
- Heat the olive oil in a large skillet over medium-high heat. Add the ground turkey, breaking it apart with a spatula or wooden spoon as it cooks.
- Season the turkey with garlic powder, ground ginger, soy sauce, salt, and black pepper. Cook for 6-8 minutes until browned and completely cooked through. Remove from heat.
- To assemble the bowls, divide the warm, cooked rice evenly among four serving bowls.
- Top the rice with the cooked ground turkey. Arrange the edamame, shredded carrots, sliced cucumber, radishes, and diced avocado in sections around the bowl.
- Drizzle the prepared Bang Bang sauce generously over the top of the bowl ingredients.
- Garnish with sliced green onions and black sesame seeds. Serve immediately.
Notes
Meal Prep Tip: Store the cooked rice, turkey, chopped vegetables, and sauce in separate airtight containers in the fridge for up to 4 days. Do not dice the avocado until right before serving to prevent browning.
