Ingredients
  

For the Turkey
  • 1 lb Lean ground turkey 93% lean recommended
  • 1 tbsp Olive oil or sesame oil
  • 1 tsp Garlic powder
  • 1 tsp Ground ginger
  • 1 tbsp Soy sauce low sodium
  • 0.5 tsp Salt to taste
  • 0.5 tsp Black pepper to taste
For the Bang Bang Sauce
  • 0.5 cup Mayonnaise Can substitute plain Greek yogurt
  • 0.25 cup Sweet chili sauce
  • 1 tbsp Sriracha sauce Adjust to desired spice level
For the Bowls
  • 3 cups White rice Cooked (jasmine or basmati)
  • 1 cup Shelled edamame Thawed if frozen
  • 1 cup Shredded carrots
  • 1 whole Mini cucumber Thinly sliced
  • 4 whole Radishes Thinly sliced
  • 1 whole Avocado Diced
  • 2 whole Green onions Sliced, for garnish
  • 1 tbsp Black sesame seeds For garnish

Method
 

  1. Prepare the rice according to package instructions if you haven't already.
  2. In a small bowl, prepare the Bang Bang sauce by whisking together the mayonnaise, sweet chili sauce, and sriracha until smooth and creamy. Set aside in the refrigerator.
  3. Heat the olive oil in a large skillet over medium-high heat. Add the ground turkey, breaking it apart with a spatula or wooden spoon as it cooks.
  4. Season the turkey with garlic powder, ground ginger, soy sauce, salt, and black pepper. Cook for 6-8 minutes until browned and completely cooked through. Remove from heat.
  5. To assemble the bowls, divide the warm, cooked rice evenly among four serving bowls.
  6. Top the rice with the cooked ground turkey. Arrange the edamame, shredded carrots, sliced cucumber, radishes, and diced avocado in sections around the bowl.
  7. Drizzle the prepared Bang Bang sauce generously over the top of the bowl ingredients.
  8. Garnish with sliced green onions and black sesame seeds. Serve immediately.

Notes

Meal Prep Tip: Store the cooked rice, turkey, chopped vegetables, and sauce in separate airtight containers in the fridge for up to 4 days. Do not dice the avocado until right before serving to prevent browning.
