Method
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, baking powder, sugar, salt, pepper, and garlic powder.
- Cut the cold butter into the flour mixture using a pastry cutter until it resembles coarse crumbs.
- Add the ham, cheese, and chives, tossing to coat them in the flour mixture.
- Whisk together the heavy cream and egg, then pour over the dry ingredients.
- Stir gently until a shaggy dough forms. Do not overmix.
- Turn dough onto a floured surface, pat into an 8-inch disc, and cut into 8 wedges.
- Place on baking sheet and brush tops with extra heavy cream.
- Bake for 18-22 minutes until golden brown. Cool on a wire rack.
Notes
Freeze cut scones for 15 minutes before baking for better rise. Use cold butter for flaky layers.
