Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tbsp sugar
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp garlic powder
Wet Ingredients & Fats
  • 0.5 cup unsalted butter cold and cubed
  • 0.75 cup heavy cream plus more for brushing
  • 1 egg large
Mix-Ins
  • 1 cup cooked ham diced
  • 1 cup sharp cheddar cheese shredded
  • 0.25 cup fresh chives chopped

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, sugar, salt, pepper, and garlic powder.
  3. Cut the cold butter into the flour mixture using a pastry cutter until it resembles coarse crumbs.
  4. Add the ham, cheese, and chives, tossing to coat them in the flour mixture.
  5. Whisk together the heavy cream and egg, then pour over the dry ingredients.
  6. Stir gently until a shaggy dough forms. Do not overmix.
  7. Turn dough onto a floured surface, pat into an 8-inch disc, and cut into 8 wedges.
  8. Place on baking sheet and brush tops with extra heavy cream.
  9. Bake for 18-22 minutes until golden brown. Cool on a wire rack.

Notes

Freeze cut scones for 15 minutes before baking for better rise. Use cold butter for flaky layers.
