Hangover Cure Garlic Potato Soup

A restorative, clear-broth soup packed with tender potatoes and whole cloves of mellow garlic to soothe and rehydrate.

Ingredients
  

Soup Base
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1 large yellow onion diced
  • 12 cloves garlic peeled and left whole/halved
  • 4 large russet potatoes peeled and cubed
  • 6 cups chicken broth or vegetable broth
Seasonings
  • 1 tsp dried thyme
  • 1 bay leaf
  • 1 tsp black pepper freshly cracked
  • 0.5 cup fresh parsley chopped

Equipment

  • Large pot or Dutch oven
  • Knife
  • Cutting board
  • Ladle

Method
 

  1. Melt butter and oil in a large pot over medium heat.
  2. Add diced onion and sauté for 5-7 minutes until soft and translucent.
  3. Add whole garlic cloves and cook for 3-4 minutes until fragrant (do not burn).
  4. Add cubed potatoes, thyme, and pepper. Stir to coat in the fats.
  5. Pour in broth and add the bay leaf. Bring to a boil, then reduce heat to low and cover.
  6. Simmer for 20-25 minutes until potatoes are fork-tender.
  7. Optional: lightly mash a few potato chunks in the pot to thicken the broth.
  8. Remove bay leaf, stir in fresh parsley, and serve hot.

Notes

Serve with crusty bread for dipping.
