Method
- Melt butter and oil in a large pot over medium heat.
- Add diced onion and sauté for 5-7 minutes until soft and translucent.
- Add whole garlic cloves and cook for 3-4 minutes until fragrant (do not burn).
- Add cubed potatoes, thyme, and pepper. Stir to coat in the fats.
- Pour in broth and add the bay leaf. Bring to a boil, then reduce heat to low and cover.
- Simmer for 20-25 minutes until potatoes are fork-tender.
- Optional: lightly mash a few potato chunks in the pot to thicken the broth.
- Remove bay leaf, stir in fresh parsley, and serve hot.
