Method
- Preheat oven to 400°F (200°C). Line a large (13x18 inch) rimmed baking sheet with aluminum foil or parchment paper.
- In a medium bowl, whisk together the soy sauce, pineapple juice, brown sugar, rice vinegar, minced ginger, and minced garlic until the sugar dissolves.
- In a large mixing bowl, combine the cubed chicken thighs, fresh pineapple chunks, red bell pepper pieces, and red onion wedges.
- Pour the glaze over the chicken and vegetable mixture and toss to coat every piece evenly.
- Spread the mixture in a single, even layer onto the prepared baking sheet. Do not overcrowd.
- Roast for 20 minutes. Toss the ingredients with tongs and return to the oven.
- Continue roasting for an additional 10–15 minutes, or until the chicken is cooked through (165°F/74°C) and the glaze has reduced.
- Garnish immediately with sliced green onions and toasted sesame seeds. Serve hot, optionally over steamed rice.
Notes
For chicken breast substitute, reduce cook time slightly. Fresh pineapple is highly recommended.
