Ingredients

Broth Base
  • 4 cups vegetable or chicken broth low sodium
  • 2 inch fresh ginger grated or thinly sliced
  • 3 cloves garlic smashed
  • 1 tsp oil olive or sesame
Finishing
  • 3 tbsp white miso paste
  • 0.5 lemon juiced
  • 1 tsp soy sauce or tamari (optional)
Garnish
  • 2 stalks green onions chopped
  • 4 slices lemon thin rounds
  • 1 tsp sesame oil toasted
  • 0.5 tsp chili flakes optional

Equipment

  • Medium saucepan
  • Whisk
  • Small bowl
  • Grater or Knife

Method

  1. Heat 1 tsp oil in a saucepan over medium heat. Add ginger and garlic; sauté for 1-2 minutes until fragrant.
  2. Pour in the broth and bring to a boil. Reduce heat and simmer gently for 10 minutes to infuse flavors.
  3. In a small bowl, whisk the miso paste with 1/2 cup of the hot broth until smooth (no lumps).
  4. Turn off the heat. Stir the miso mixture back into the main pot. (Do not boil!).
  5. Stir in lemon juice and soy sauce/tamari to taste.
  6. Ladle into bowls. Garnish with lemon slices, chopped green onions, chili flakes, and a drizzle of sesame oil.

Notes

Add tofu cubes or cooked noodles for a heartier meal. Never boil the soup after adding miso to preserve probiotics.
