Ingredients
  

The Filling
  • 1 cup natural peanut butter creamy and drippy
  • 0.33 cup maple syrup or honey
  • 2.5 cups cornflakes cereal crushed lightly
  • 1 tsp vanilla extract optional
The Coating
  • 1 cup dark chocolate chips dairy free if needed
  • 1 tbsp coconut oil
  • 1 pinch sea salt for topping

Equipment

  • 8x8 Baking Pan
  • Parchment paper

Method
 

  1. Line an 8x8 inch pan with parchment paper.
  2. In a bowl, whisk together peanut butter, maple syrup, and vanilla until smooth.
  3. Lightly crush cornflakes and fold them into the peanut butter mixture until evenly coated.
  4. Press mixture firmly into the prepared pan and freeze for 20-30 minutes.
  5. Slice the frozen block into bars.
  6. Melt chocolate chips and coconut oil in the microwave until smooth.
  7. Dip bars into chocolate or drizzle over top. Sprinkle with sea salt.
  8. Freeze or refrigerate for 10 minutes to set the chocolate before serving.

Notes

Use certified gluten-free cornflakes if you have a gluten allergy. Store in the fridge or freezer to maintain the best texture.
