Ingredients
  

Cookie Dough Layer
  • 1.5 cups almond flour
  • 0.5 cup creamy unsweetened nut butter almond, cashew, or peanut
  • 0.25 cup maple syrup
  • 1 tsp vanilla extract
  • 0.25 tsp salt
  • 0.5 cup vegan mini chocolate chips
Chocolate Layer
  • 1 cup vegan chocolate chips dark chocolate works well
  • 1 tbsp coconut oil
  • 1 pinch flaky sea salt optional, for sprinkling

Equipment

  • 8x8 inch baking dish
  • Parchment paper
  • Mixing bowls

Method
 

  1. Line an 8x8 inch baking dish with parchment paper.
  2. Mix almond flour, nut butter, maple syrup, vanilla, and salt until a dough forms.
  3. Fold in vegan mini chocolate chips.
  4. Press dough evenly into the prepared dish. Chill in the freezer for 10-15 minutes.
  5. Melt vegan chocolate chips and coconut oil together until smooth.
  6. Pour melted chocolate over the chilled cookie dough layer, spreading evenly.
  7. Sprinkle with flaky sea salt if desired.
  8. Freeze for 30-60 minutes until chocolate is firm.
  9. Lift bark from pan and break or cut into pieces.
  10. Store in an airtight container in the refrigerator or freezer.

Notes

Ensure all ingredients for the cookie dough layer are well combined for a smooth consistency. For easy cleanup, make sure the parchment paper overhangs the sides of the pan.
