Healthy No Bake S'mores Cookie Dough Bites

Ingredients
  

Cookie Dough Base
  • 1 cup oat flour gluten-free if needed
  • 0.5 cup vanilla protein powder
  • 0.5 cup cashew butter or almond butter, drippy
  • 0.25 cup pure maple syrup
  • 1-2 tbsp almond milk as needed for dough consistency
  • 1 pinch sea salt
Marshmallow Layer
  • 0.25 cup marshmallow fluff or melted marshmallows
Chocolate Coating
  • 1 cup dark chocolate chips
  • 1 tsp coconut oil

Equipment

  • Mixing bowls
  • Mini muffin tin or baking sheet
  • Microwave-safe bowl

Method
 

  1. Line a mini muffin tin with liners or a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the oat flour, vanilla protein powder, and salt.
  3. Add the cashew butter and maple syrup to the dry ingredients, mixing until a dough forms. Add almond milk a teaspoon at a time if the dough is too crumbly.
  4. Scoop about 1 tablespoon of dough per bite, roll into a ball, and press flat into the lined muffin tin.
  5. Spread a small dollop (about 1/2 tsp) of marshmallow fluff on top of each cookie dough base.
  6. Place the tin in the freezer for 15-20 minutes to firm up.
  7. In a microwave-safe bowl, melt the dark chocolate chips and coconut oil in 30-second intervals until smooth.
  8. Dip each chilled bite into the melted chocolate to coat completely, then place back on the parchment paper.
  9. Return to the fridge or freezer for 10-15 minutes until the chocolate shell has hardened. Serve and enjoy!

Notes

Store in an airtight container in the fridge for up to a week, or in the freezer for up to 3 months.
