Method
- Line a mini muffin tin with liners or a baking sheet with parchment paper.
- In a mixing bowl, whisk together the oat flour, vanilla protein powder, and salt.
- Add the cashew butter and maple syrup to the dry ingredients, mixing until a dough forms. Add almond milk a teaspoon at a time if the dough is too crumbly.
- Scoop about 1 tablespoon of dough per bite, roll into a ball, and press flat into the lined muffin tin.
- Spread a small dollop (about 1/2 tsp) of marshmallow fluff on top of each cookie dough base.
- Place the tin in the freezer for 15-20 minutes to firm up.
- In a microwave-safe bowl, melt the dark chocolate chips and coconut oil in 30-second intervals until smooth.
- Dip each chilled bite into the melted chocolate to coat completely, then place back on the parchment paper.
- Return to the fridge or freezer for 10-15 minutes until the chocolate shell has hardened. Serve and enjoy!

Store in an airtight container in the fridge for up to a week, or in the freezer for up to 3 months.
