Hearty Sausage and Potato Breakfast Power Bowl

Ingredients
  

Bowl Base
  • 2 cups Yukon Gold potatoes diced into 1/2 inch cubes
  • 2 links smoked sausage sliced into coins
  • 2 cups kale chopped, stems removed
  • 1 tbsp olive oil
Seasoning & Toppings
  • 2 large eggs
  • 1 tsp butter for frying eggs
  • 0.5 tsp garlic powder
  • 0.5 tsp smoked paprika
  • 1 pinch salt and pepper to taste
  • 1 tbsp fresh parsley chopped for garnish

Equipment

  • Large skillet or cast iron pan
  • Chef's knife
  • Cutting board
  • Spatula

Method
 

  1. Wash and dice potatoes. Heat olive oil in a large skillet over medium-high heat.
  2. Add potatoes to the skillet. Season with salt, pepper, garlic powder, and paprika. Cook for 15-20 minutes until crispy and tender.
  3. Remove potatoes from pan. Add sliced sausage and sear for 2-3 minutes per side until browned. Remove and set aside.
  4. Add kale to the hot pan (add a splash of water if needed) and sauté for 3 minutes until wilted.
  5. In a separate small pan or the same wiped-clean skillet, melt butter and fry eggs sunny-side up until whites are set but yolks are runny.
  6. Divide potatoes, sausage, and kale between two bowls.
  7. Top each bowl with a fried egg and garnish with fresh parsley.
  8. Serve immediately while hot.

Notes

For a lower carb version, swap potatoes for roasted radishes or cauliflower. Store components separately for meal prep.
