Wet Ingredients
  • 1.5 cups mashed ripe bananas approx 3 large bananas
  • 2 large eggs
  • 0.5 cup Greek yogurt plain non-fat
  • 0.33 cup maple syrup or honey or sugar-free syrup
  • 1 tsp vanilla extract
Dry Ingredients
  • 1.5 cups oat flour gluten-free if needed
  • 1 cup vanilla protein powder whey/casein blend preferred
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 0.5 cup dark chocolate chips

Method
 

  1. Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. In a large bowl, mash the bananas until mostly smooth.
  3. Whisk in the eggs, Greek yogurt, sweetener, and vanilla extract until well combined.
  4. Add the oat flour, protein powder, baking soda, baking powder, and cinnamon. Gently fold with a spatula until just combined. Do not overmix.
  5. Fold in the chocolate chips.
  6. Pour batter into the loaf pan and bake for 45-55 minutes, or until a toothpick comes out with moist crumbs.
  7. Let cool in the pan for 15 minutes before transferring to a wire rack to cool completely.
