Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 1 tsp garlic powder
Wet Ingredients
  • 1 cup Greek yogurt plain, non-fat
  • 2 large eggs beaten
  • 0.25 cup unsalted butter melted
Mix-Ins
  • 1.5 cups ham cooked and diced small
  • 1.5 cups cheddar cheese shredded
  • 0.5 cup fresh spinach chopped (or chives)

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or grease a muffin tin.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, and garlic powder.
  3. In a separate bowl, whisk together Greek yogurt, beaten eggs, and melted butter until smooth.
  4. Pour wet ingredients into dry ingredients and mix gently until just combined. Do not overmix.
  5. Fold in the diced ham, shredded cheese, and chopped spinach.
  6. Scoop dough into 12 even portions onto the baking sheet or into muffin cups.
  7. Bake for 18–22 minutes until golden brown and set in the center.
  8. Cool on the pan for 5 minutes, then move to a wire rack to cool completely.

Notes

Store in fridge for 5 days or freeze for up to 3 months.
