Method
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or grease a muffin tin.
- In a large bowl, whisk together flour, baking powder, baking soda, salt, and garlic powder.
- In a separate bowl, whisk together Greek yogurt, beaten eggs, and melted butter until smooth.
- Pour wet ingredients into dry ingredients and mix gently until just combined. Do not overmix.
- Fold in the diced ham, shredded cheese, and chopped spinach.
- Scoop dough into 12 even portions onto the baking sheet or into muffin cups.
- Bake for 18–22 minutes until golden brown and set in the center.
- Cool on the pan for 5 minutes, then move to a wire rack to cool completely.

Store in fridge for 5 days or freeze for up to 3 months.
