Ingredients
  

Dry Ingredients
  • 0.5 cup chocolate protein powder whey/casein blend preferred
  • 0.5 cup unsweetened cocoa powder Dutch-processed
  • 0.25 cup oat flour
  • 0.5 tsp baking powder
  • 0.25 tsp salt
Wet Ingredients & Mix-ins
  • 0.5 cup plain Greek yogurt
  • 0.25 cup unsweetened almond milk
  • 0.33 cup pure maple syrup or honey
  • 2 large eggs room temperature
  • 1 tsp vanilla extract
  • 0.33 cup semi-sweet chocolate chips plus more for topping
  • 1 pinch flaky sea salt for garnish

Method
 

  1. Preheat your oven to 350°F (175°C). Liberally spray a 12-cup muffin tin with non-stick cooking spray or line with silicone liners.
  2. In a medium bowl, whisk together the protein powder, cocoa powder, oat flour, baking powder, and salt until no clumps remain.
  3. In a separate large bowl, whisk the Greek yogurt, almond milk, maple syrup, eggs, and vanilla extract until completely smooth.
  4. Pour the dry ingredients into the wet ingredients. Gently fold with a spatula just until combined. Do not overmix, or the brownies will be tough.
  5. Gently fold in the chocolate chips.
  6. Divide the batter evenly among the 12 muffin cups. Top each with a few extra chocolate chips.
  7. Bake for 12-15 minutes. A toothpick inserted into the center should come out with moist crumbs, not completely clean. Do not overbake.
  8. Remove from oven and immediately sprinkle with flaky sea salt. Let cool in the tin for 15 minutes before removing.

Notes

If using a plant-based/vegan protein powder, you may need to add an extra 2-3 tablespoons of almond milk as they are more absorbent.
