- Preheat your oven to 350°F (175°C). Liberally spray a 12-cup muffin tin with non-stick cooking spray or line with silicone liners.
- In a medium bowl, whisk together the protein powder, cocoa powder, oat flour, baking powder, and salt until no clumps remain.
- In a separate large bowl, whisk the Greek yogurt, almond milk, maple syrup, eggs, and vanilla extract until completely smooth.
- Pour the dry ingredients into the wet ingredients. Gently fold with a spatula just until combined. Do not overmix, or the brownies will be tough.
- Gently fold in the chocolate chips.
- Divide the batter evenly among the 12 muffin cups. Top each with a few extra chocolate chips.
- Bake for 12-15 minutes. A toothpick inserted into the center should come out with moist crumbs, not completely clean. Do not overbake.
- Remove from oven and immediately sprinkle with flaky sea salt. Let cool in the tin for 15 minutes before removing.
Notes
If using a plant-based/vegan protein powder, you may need to add an extra 2-3 tablespoons of almond milk as they are more absorbent.
