Ingredients
  

Poppers
  • 1 lb ground chicken
  • 2 cups zucchini shredded and squeezed dry
  • 2 tbsp green onions sliced
  • 2 tbsp cilantro minced
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.25 cup almond flour or panko breadcrumbs
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp avocado oil for frying
Green Sauce
  • 0.5 cup Greek yogurt plain
  • 0.25 cup cilantro leaves
  • 1 tbsp lime juice
  • 1 clove garlic

Equipment

  • Large skillet
  • Box grater
  • Mixing bowl
  • Clean Kitchen Towel

Method
 

  1. Grate zucchini and place in a clean towel. Squeeze firmly to remove as much liquid as possible.
  2. In a large bowl, mix ground chicken, dried zucchini, green onions, cilantro, spices, and almond flour/breadcrumbs. Mix until just combined.
  3. Form mixture into 12-15 small patties. If sticky, dampen hands with water.
  4. Heat oil in a large skillet over medium-high heat.
  5. Cook patties for 3-4 minutes per side until golden brown and cooked through (165°F internal).
  6. While poppers cook, blend or whisk together yogurt, cilantro, lime, and garlic for the sauce.
  7. Serve hot with the creamy green sauce.

Notes

Squeezing the zucchini is critical! Do not skip this step.
