Ingredients
  

Yogurt Base
  • 2 cups Greek yogurt plain or vanilla
  • 0.5 cup natural peanut butter creamy
  • 0.25 cup honey or maple syrup
  • 1 scoop vanilla protein powder optional
  • 1 tsp vanilla extract
  • 0.25 cup mini dark chocolate chips
Toppings & Drizzle
  • 0.25 cup roasted peanuts crushed
  • 2 tbsp dark chocolate chips melted
  • 2 tbsp peanut butter melted for drizzle
  • 1 pinch sea salt

Method
 

  1. Line a large baking sheet with parchment paper.
  2. In a bowl, mix Greek yogurt, peanut butter, honey, protein powder, and vanilla extract until smooth.
  3. Fold in the mini dark chocolate chips.
  4. Using a cookie scoop, drop mounds of the mixture onto the prepared baking sheet.
  5. Sprinkle the tops with crushed peanuts and lightly press them in.
  6. Freeze for 1-2 hours until solid.
  7. Melt the extra chocolate and peanut butter in the microwave. Drizzle over the frozen bites.
  8. Return to the freezer for 15 minutes to set. Let soften for 3 minutes before eating.

Notes

Use full-fat Greek yogurt for the creamiest texture to avoid ice crystals. Store in an airtight container in the freezer for up to 2 months.
