Ingredients
  

Main
  • 1 lb large shrimp peeled and deveined
  • 4 cups broccoli florets fresh
  • 1 tbsp olive oil
  • 1 pinch salt and black pepper to taste
Honey Garlic Sauce
  • 0.33 cup honey
  • 0.25 cup soy sauce low sodium
  • 4 cloves garlic minced
  • 1 tsp fresh ginger grated
  • 1 tsp apple cider vinegar
  • 1 tsp sesame oil

Method
 

  1. Thaw shrimp if frozen and pat completely dry with paper towels. Season with salt and pepper.
  2. In a small bowl, whisk together honey, soy sauce, minced garlic, ginger, vinegar, and sesame oil.
  3. Optional: Blanch broccoli florets in boiling water for 2 minutes, then drain. This ensures they are tender.
  4. Heat olive oil in a large skillet over medium-high heat. Add shrimp in a single layer.
  5. Sear shrimp for 1-2 minutes per side until pink and golden. Remove shrimp from pan and set aside.
  6. Pour the sauce mixture into the hot skillet. Simmer for 2 minutes until it begins to thicken.
  7. Add the broccoli and cooked shrimp back into the pan. Toss to coat evenly in the glaze.
  8. Cook for 1 more minute to heat through, then serve immediately over rice or cauliflower rice.

Notes

For a thicker sauce, mix 1 tsp cornstarch with 1 tbsp water and add to the bubbling sauce.
