High Protein Hot Honey Beef Bowl

Ingredients
  

Roasted Sweet Potatoes
  • 3 medium sweet potatoes peeled and cubed
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 0.5 tsp salt
Hot Honey Beef
  • 1 lb lean ground beef (93/7)
  • 3 cloves garlic minced
  • 0.25 cup honey
  • 1-2 tbsp hot sauce (Sriracha or similar)
  • 1 tbsp soy sauce low sodium
  • 1 tsp red pepper flakes optional for extra heat
Toppings
  • 1 large avocado sliced
  • 0.5 cup feta cheese crumbled
  • 2 tbsp fresh parsley chopped

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Toss cubed sweet potatoes with olive oil, paprika, and salt. Spread in a single layer on the baking sheet.
  3. Roast for 25–30 minutes, tossing halfway through, until tender and slightly charred on edges.
  4. While potatoes roast, heat a skillet over medium-high heat. Add ground beef and cook, breaking it up, until browned (about 6-8 mins). Drain excess fat.
  5. Add minced garlic to the beef and cook for 1 minute until fragrant.
  6. In a small bowl, whisk honey, hot sauce, soy sauce, and red pepper flakes. Pour over the beef.
  7. Simmer beef mixture on low for 2-3 minutes until the sauce thickens and glazes the meat.
  8. Assemble bowls with roasted potatoes, hot honey beef, avocado slices, and crumbled feta. Garnish with parsley.

Notes

Store beef and potatoes in meal prep containers for up to 4 days. Add avocado fresh before serving.
