- Finish the soup: Stir in the remaining white beans and the heavy cream. Return the soup to a gentle simmer (do not boil). The broth should now have a **heavy, viscous texture**.
- Add the kale: Stir in the chopped kale and cook for 5 minutes, or until the kale has wilted but still holds its deep green color.
- Season and Serve: Taste and adjust seasoning with salt and pepper. Serve hot, garnished with fresh parmesan cheese or a slice of crusty bread for dipping.
Notes
For maximum high protein content, use a can of pureed white beans instead of flour or cornstarch for thickening. This eliminates the 'starchy' taste while achieving that creamy, thick consistency. To make this low-carb, omit the potatoes and use extra cream cheese or heavy cream for thickness.
