Ingredients
  

Egg Mixture
  • 8 large eggs
  • 0.25 cup milk or cream
  • 0.5 tsp garlic powder
  • 1 pinch salt and pepper to taste
Fillings
  • 1 cup breakfast sausage cooked and crumbled (or turkey sausage)
  • 1 cup fresh spinach chopped
  • 0.5 cup mushrooms sliced
  • 0.5 cup red bell pepper diced
  • 0.5 cup cheddar cheese shredded (optional)

Method
 

  1. Preheat oven to 375°F (190°C). Grease 4 oven-safe glass meal prep containers.
  2. If sausage is raw, cook in a skillet until browned. Drain grease.
  3. Divide cooked sausage, spinach, mushrooms, and bell peppers evenly among the containers.
  4. In a bowl, whisk eggs, milk, garlic powder, salt, and pepper until combined.
  5. Pour egg mixture over the fillings in each container.
  6. Bake for 20-25 minutes until eggs are set and slightly golden on top.
  7. Let cool completely before covering with lids. Refrigerate for up to 5 days.

Notes

Ensure your glass containers are oven-safe. If not, bake in a casserole dish and cut into portions later.
