Ingredients
  

Waffle Batter
  • 1 scoop vanilla whey protein powder (approx 30g)
  • 0.5 cup oat flour (or blended oats)
  • 0.5 cup low-fat cottage cheese or Greek yogurt
  • 2 large eggs
  • 0.5 tsp baking powder
  • 1 tsp vanilla extract
  • 2-3 tbsp milk as needed for consistency
Toppings (Optional)
  • 2 tbsp Greek yogurt for garnish
  • 1 slice fresh strawberry
  • 1 tbsp sugar-free syrup

Method
 

  1. Preheat your waffle iron to medium-high heat and grease lightly with cooking spray.
  2. In a blender, combine eggs, cottage cheese (or yogurt), milk, and vanilla extract. Blend until smooth to remove any lumps.
  3. Add the oat flour, protein powder, and baking powder to the blender.
  4. Pulse or mix gently just until the batter is combined. Do not over-mix. The batter should be thick but pourable.
  5. Pour the batter onto the hot waffle iron. Close the lid and cook for 3–5 minutes, or until the steam stops rising.
  6. Remove carefully with a fork and transfer to a plate.
  7. Top with a dollop of Greek yogurt, a strawberry slice, and syrup as shown in the photo. Serve immediately.

Notes

Ensure your waffle iron is fully hot before pouring batter to prevent sticking. If using plant-based protein, you may need to add more milk.
