Homemade Frosted Sugar Cookie Bars

Thick, soft, and chewy sugar cookie bars topped with a generous layer of pink vanilla buttercream and sprinkles. Better than the bakery!

Ingredients
  

The Cookie Base
  • 0.5 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg room temperature
  • 1 large egg white
  • 0.25 cup sour cream room temperature
  • 2 tsp vanilla extract
  • 0.5 tsp almond extract optional
  • 2.5 cups all-purpose flour spooned and leveled
  • 1 tsp baking powder
  • 0.5 tsp salt
The Frosting
  • 0.5 cup unsalted butter softened
  • 2.5 cups powdered sugar
  • 2 tbsp heavy cream or milk
  • 1 tsp vanilla extract
  • 1 drop pink food coloring optional
  • 0.25 cup rainbow sprinkles

Equipment

  • 9x13 Baking Pan
  • Stand mixer or hand mixer
  • Offset spatula
  • Measuring Cups

Method
 

  1. Preheat oven to 375°F (190°C). Grease a 9x13 inch pan.
  2. Cream butter and sugar together on medium speed until light and fluffy (2-3 mins).
  3. Add egg, egg white, sour cream, vanilla, and almond extract. Mix until smooth.
  4. Add flour, baking powder, and salt. Mix on low until just combined. The dough will be thick.
  5. Press the dough evenly into the prepared pan. Use floured hands if sticky.
  6. Bake for 15-18 minutes. Edges should be barely golden, center soft. Do not overbake.
  7. Cool completely in the pan.
  8. Beat frosting ingredients (butter, sugar, cream, vanilla) until fluffy. Add coloring.
  9. Spread frosting over cooled bars and top with sprinkles immediately. Cut into squares.

Notes

Do not overbake! They will look underdone in the center when you take them out, but will set as they cool.
