Ingredients
  

Dry Mix
  • 2 cups old-fashioned rolled oats
  • 0.5 cup cashews chopped
  • 0.5 cup peanuts roasted
  • 0.25 cup sunflower seeds
  • 0.5 cup dried cranberries
Binder
  • 0.5 cup creamy peanut butter
  • 0.5 cup honey
  • 0.25 cup light brown sugar
  • 0.25 cup unsalted butter
  • 1 tsp vanilla extract

  • Saucepan
  • Large mixing bowl
  • Parchment paper

Method
 

  1. Optional: Toast oats, cashews, peanuts, and seeds in a 350°F (175°C) oven for 8-10 mins. Mix with cranberries in a bowl.
  2. In a saucepan, melt butter, honey, and brown sugar. Simmer gently for 1 minute.
  3. Remove from heat. Stir in peanut butter and vanilla until smooth.
  4. Pour wet mixture over the dry oat mixture. Stir until thoroughly coated.
  5. Transfer to a parchment-lined 8x8 inch pan.
  6. Press mixture down VERY firmly to compact it.
  7. Refrigerate for at least 2 hours before slicing into bars.

Notes

Store in the refrigerator to maintain firmness.
