Ingredients

Dole Whip Base
  • 4 cups frozen strawberries must be frozen solid
  • 0.5 cup pineapple juice chilled
  • 0.5 cup coconut milk full fat, or vanilla ice cream for non-vegan
  • 1 tbsp lemon juice freshly squeezed
  • 2 tbsp honey or sugar optional, to taste
  • 1 pinch salt

Equipment

  • High-powered blender or Food processor
  • Piping bag
  • Star piping tip (1M)

Method

  1. Place pineapple juice, coconut milk, and lemon juice into the blender container.
  2. Add the frozen strawberries and sweetener (if using) on top of the liquids.
  3. Start blender on low speed, using the tamper to push strawberries down into the blades.
  4. Increase speed to high and blend until just smooth and creamy. Do not overblend or it will melt.
  5. Transfer mixture to a piping bag fitted with a star tip.
  6. Pipe swirls into cups immediately and serve garnished with fresh fruit.

Notes

If the mixture is too soft, freeze for 20 minutes before piping.
