Ingredients
  

Chicken & Gravy
  • 1 lb chicken breast boneless skinless
  • 4 cups chicken broth divided use
  • 4 tbsp butter unsalted
  • 0.33 cup all-purpose flour
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 0.5 tsp black pepper coarse ground
  • 0.5 cup heavy cream optional
Serving
  • 4 cups mashed potatoes prepared

  • Large skillet
  • Whisk
  • Pot for potatoes

Method
 

  1. Simmer chicken breasts in 2 cups of broth with onion and garlic powder for 15 mins until cooked.
  2. Remove chicken, shred with forks, and discard cooking liquid.
  3. In the same pan, melt butter and whisk in flour. Cook for 1-2 minutes to make a roux.
  4. Gradually whisk in remaining 2 cups of chicken broth until smooth and thickened.
  5. Add heavy cream (if using) and season generously with salt and pepper.
  6. Stir the shredded chicken back into the gravy and heat through.
  7. Serve hot over a bowl of mashed potatoes.

Notes

Use rotisserie chicken to speed up the process. Add browning sauce for darker gravy.
