Honey Balsamic Salmon with Peaches

Ingredients
  

Salmon & Fruit
  • 4 fillets salmon 6oz each
  • 3 large peaches sliced into wedges
  • 1 tbsp olive oil
  • 1 tbsp butter
Balsamic Glaze
  • 0.33 cup balsamic vinegar
  • 0.25 cup honey
  • 2 cloves garlic minced
  • 1 tsp Dijon mustard
Garnish
  • 0.25 cup fresh basil chopped

  • Small mixing bowl
  • Whisk

Method
 

  1. Whisk together balsamic vinegar, honey, garlic, and Dijon mustard in a small bowl. Set aside.
  2. Pat salmon fillets dry and season generously with salt and pepper.
  3. Heat olive oil in a large skillet over medium-high heat. Sear salmon (skin-side down first if applicable) for 4-5 minutes.
  4. Flip the salmon. Add butter and sliced peaches to the pan around the fish.
  5. Pour the balsamic mixture over the fish and fruit.
  6. Simmer for 3-4 minutes, spooning sauce over the fish frequently, until peaches are soft and sauce is thick.
  7. Remove from heat once salmon is cooked through.
  8. Garnish with fresh chopped basil and serve immediately.

Notes

For a spicy kick, add a pinch of red pepper flakes to the sauce. Nectarines can be substituted for peaches.
