Honey BBQ Chicken Rice

Tender bite-sized chicken pieces coated in a sticky, sweet and savory homemade honey BBQ glaze, served over corn-flecked rice.

Ingredients
  

The Chicken
  • 1.5 lbs chicken breast cubed
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp smoked paprika
The Sauce
  • 1 cup BBQ sauce your favorite brand
  • 0.33 cup honey
  • 2 tbsp soy sauce
  • 1 tbsp apple cider vinegar
  • 2 cloves garlic minced
Serving
  • 3 cups cooked white rice
  • 1 cup corn canned or frozen
  • 3 stalks green onions chopped

Equipment

  • Large skillet
  • Mixing bowl

Method
 

  1. Cut chicken into bite-sized cubes and toss with garlic powder, onion powder, paprika, salt, and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Sear chicken until golden brown and cooked through. Remove and set aside.
  3. In the same skillet, melt butter and sauté minced garlic. Add BBQ sauce, honey, soy sauce, and vinegar. Whisk to combine.
  4. Simmer sauce for 2-3 minutes until thickened and sticky.
  5. Return chicken to the pan and toss to coat in the glaze.
  6. Mix corn and butter into warm rice. Serve chicken over the rice mixture and top with green onions.

Notes

Use leftover rice for an even faster meal. Add red pepper flakes for heat.
