Honey Feta Sweet Potato Rounds

Ingredients
  

  • 2 large sweet potatoes cut into 1/2-inch thick rounds
  • 2 tbsp olive oil
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper
  • 4 oz feta cheese crumbled (about 1 cup)
  • 2 tbsp honey plus more for drizzling
  • 1 tbsp fresh thyme leaves plus sprigs for garnish

Method
 

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. In a large bowl, toss the sweet potato rounds with olive oil, kosher salt, and black pepper until evenly coated.
  3. Arrange the sweet potato rounds in a single, even layer on the prepared baking sheet. Do not overcrowd the pan.
  4. Roast for 15 minutes. Remove from oven, flip each round with a spatula, and return to the oven.
  5. Roast for another 10-12 minutes, or until tender and caramelized on both sides.
  6. Remove from oven. Immediately sprinkle with crumbled feta cheese, drizzle with honey, and scatter fresh thyme leaves over the top.
  7. Transfer to a serving platter and serve warm.

Notes

For best results, use a block of feta in brine and crumble it yourself. For a spicy kick, add 1/4 tsp of red pepper flakes with the salt and pepper. Leftovers can be reheated in a 375°F oven for 5-7 minutes.
