Honey Garlic Roasted Potatoes with Feta

Ingredients
  

Potatoes
  • 2 lbs Yukon Gold potatoes cut into wedges
  • 0.25 cup olive oil
  • 1 tbsp dried oregano
  • 1 tsp smoked paprika
  • 1 tsp salt
The Glaze & Topping
  • 3 tbsp honey
  • 4 cloves garlic minced
  • 1 tbsp lemon juice
  • 7 oz feta cheese block, broken into chunks
  • 2 tbsp fresh thyme chopped

Equipment

  • Large Baking Sheet or Roasting Pan
  • Mixing bowl
  • Knife

Method
 

  1. Preheat oven to 400°F (200°C). Wash potatoes and cut into uniform wedges.
  2. In a bowl, mix olive oil, dried oregano, paprika, salt, and pepper.
  3. Toss potato wedges in the oil mixture until coated. Arrange in a single layer on a baking sheet.
  4. Roast for 25-30 minutes, flipping halfway through, until golden and tender.
  5. Whisk together honey, minced garlic, and lemon juice.
  6. Remove pan from oven. Drizzle honey mixture over potatoes and toss to coat. Scatter feta cheese chunks over the top.
  7. Return to oven for 10-15 minutes until feta is warm and potatoes are sticky and crisp.
  8. Garnish with fresh thyme and serve immediately.

Notes

Add the garlic and honey in the second half of roasting to prevent the garlic from burning.
