Method
- Butter one side of each slice of bread generously.
- On the un-buttered side, layer shredded cheddar, then Brie slices, then more cheddar. Top with thyme leaves.
- Close the sandwiches with the remaining bread, buttered side facing out.
- Heat skillet over medium-low heat. Cook sandwiches, covered, for 3-4 minutes until golden.
- Flip carefully. Drizzle honey onto the hot toasted top while the second side cooks.
- Cook until cheese is fully melted and bottom is golden brown.
- Stack sandwiches, drizzle with remaining honey, sprinkle with sea salt and fresh thyme sprigs.
- Serve immediately while warm and gooey.
Notes
Using a lid while cooking is crucial to melt the Brie without burning the brioche bread.
