Ingredients
  

Dark Chocolate Crust
  • 2 cups dark chocolate cookie crumbs finely crushed
  • 0.25 cup granulated sugar
  • 6 tbsp unsalted butter melted
  • 0.25 tsp salt
Cheesecake Base Batter
  • 32 oz cream cheese room temperature
  • 1 cup granulated sugar
  • 1 cup sour cream room temperature
  • 1 tbsp vanilla extract
  • 4 large eggs room temperature
  • 2 tbsp all-purpose flour
  • 0.25 tsp salt
Lavender Layer Addition
  • 1.5 tsp culinary dried lavender finely crushed, or 1 tsp extract
  • 3 drops purple food coloring gel preferred
Garnish
  • 0.5 cup liquid honey for drizzling
  • 1 sprig fresh lavender optional, for decoration

Equipment

  • 9-inch springform pan
  • Stand mixer or hand mixer
  • Large roasting pan (for water bath)
  • Heavy-duty aluminum foil

Method
 

  1. Preheat oven to 325°F (160°C). Wrap the outside of a 9-inch springform pan in multiple layers of heavy-duty foil.
  2. Mix cookie crumbs, sugar, melted butter, and salt. Press firmly into the bottom of the pan and bake for 10 minutes. Let cool.
  3. Beat room-temperature cream cheese until smooth. Add sugar, flour, and salt, mixing until combined.
  4. Blend in the sour cream and vanilla extract. On low speed, add eggs one at a time, mixing just until combined.
  5. Pour exactly half of the batter over the crust and smooth it into an even layer.
  6. To the remaining batter, fold in the crushed lavender (or extract) and purple food coloring until vibrant and uniform.
  7. Carefully spoon the purple batter over the white layer, smoothing the top without disturbing the bottom layer.
  8. Place the pan in a roasting pan filled with 1 inch of boiling water. Bake for 60-70 minutes until edges are set.
  9. Turn off oven, crack door, and let cool inside for 1 hour. Remove and chill in the fridge overnight.
  10. Before serving, slice the cake, drizzle generously with honey, and garnish with fresh lavender.

Notes

For clean slices, dip a sharp knife in hot water and wipe it dry between every single cut. Store leftovers in the fridge for up to 5 days.
