Ingredients
  

Roasted Carrots
  • 1.5 lbs young carrots peeled and trimmed
  • 2 tbsp olive oil
  • 2 tbsp honey or maple syrup
  • 1 tsp cumin ground
  • 0.5 tsp salt
  • 0.5 tsp black pepper cracked
Whipped Feta
  • 8 oz feta cheese block style
  • 0.5 cup Greek yogurt or cream cheese
  • 1 tbsp lemon juice
  • 1 clove garlic minced
  • 2 tbsp olive oil
Garnish
  • 1 tsp red pepper flakes
  • 1 tbsp fresh parsley chopped
  • 1 tsp flaky sea salt

Equipment

  • Baking sheet
  • Food processor or blender
  • Parchment paper
  • Vegetable peeler

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Place peeled carrots on the baking sheet. Drizzle with olive oil and honey, then sprinkle with cumin, salt, and pepper. Toss to coat evenly.
  3. Roast for 25-35 minutes, turning halfway, until carrots are tender and caramelized.
  4. While carrots roast, combine feta, Greek yogurt, lemon juice, garlic, and pepper in a food processor.
  5. Pulse to combine, then stream in olive oil while blending until the mixture is smooth and creamy.
  6. Spread whipped feta onto a serving plate. Top with hot roasted carrots.
  7. Garnish with red pepper flakes, fresh parsley, flaky sea salt, and a final drizzle of olive oil. Serve warm.

Notes

For a nuttier flavor, top with toasted pistachios. Store leftovers separately in the fridge for up to 3 days.
