Ingredients
  

Fudge Base
  • 1 can sweetened condensed milk 14 oz, full-fat
  • 2 cups semi-sweet chocolate chips 12 oz
  • 0.5 cup unsalted butter 1 stick
  • 0.5 tsp salt
  • 1 tsp vanilla extract
  • 0.25 cup cocoa powder optional, for deeper chocolate flavor
Add-ins & Topping
  • 1 cup mini marshmallows plus more for topping, if desired

Equipment

  • 8x8 inch baking dish
  • Parchment paper or foil
  • Large microwave-safe bowl or double boiler
  • Spatula

Method
 

  1. Line an 8x8 inch baking dish with parchment paper or foil, leaving an overhang. Lightly grease.
  2. In a large microwave-safe bowl, combine condensed milk, chocolate chips, butter, and salt.
  3. Microwave in 30-second intervals, stirring after each, until smooth, thick, and glossy (2-3 mins total). Alternatively, use a double boiler.
  4. Stir in vanilla extract and optional cocoa powder until fully incorporated. Mixture should be thick and heavy.
  5. Gently fold in 1 cup of mini marshmallows. Work quickly to prevent them from melting too much.
  6. Pour the gooey fudge into the prepared pan and spread evenly.
  7. If desired, sprinkle extra mini marshmallows on top and gently press them in.
  8. Chill in the refrigerator for 2-3 hours, or until completely firm and set.
  9. Lift fudge from pan using overhang. Cut into 1-inch squares with a warm, sharp knife.

Notes

For clean cuts, warm your knife under hot water and wipe dry between each slice. Store at room temperature for best gooey texture.
