Hot Honey BBQ Chicken Quesadillas

Crispy flour tortillas filled with BBQ chicken, melted cheese, and red onions, finished with a spicy hot honey drizzle.

Ingredients
  

Hot Honey BBQ Sauce
  • 0.5 cup BBQ sauce Sweet Baby Ray's or similar
  • 2 tbsp honey
  • 1 tbsp hot sauce Frank's RedHot
  • 0.5 tsp cayenne pepper optional for extra heat
Quesadillas
  • 2 cups cooked chicken shredded (rotisserie works best)
  • 4 flour tortillas large burrito size
  • 2 cups shredded cheese Cheddar and Monterey Jack blend
  • 0.5 cup red onion finely diced
  • 0.25 cup fresh parsley or cilantro chopped
  • 2 tbsp butter for frying

Equipment

  • Large skillet or griddle
  • Chef's knife
  • Mixing bowl
  • Spatula

Method
 

  1. In a small bowl, whisk together BBQ sauce, honey, hot sauce, and cayenne pepper.
  2. Place shredded chicken in a bowl and toss with 2/3 of the sauce mixture. Reserve the rest for drizzling.
  3. Lay out tortillas. Sprinkle cheese on one half, top with chicken, diced red onion, and herbs. Top with a little more cheese.
  4. Fold tortillas in half. Heat butter in a large skillet over medium heat.
  5. Cook quesadillas for 3-4 minutes per side until golden brown and cheese is melted.
  6. Slice into wedges and stack on a plate.
  7. Drizzle generously with the reserved hot honey BBQ sauce and garnish with extra onion and herbs.

Notes

Serve with ranch dressing or sour cream for dipping.
