Hot Honey Feta Chicken

Ingredients
  

Chicken
  • 4 medium chicken breasts boneless, skinless
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp olive oil for searing
Hot Honey Sauce
  • 0.5 cup honey
  • 4 tbsp unsalted butter
  • 3 cloves garlic minced
  • 1 tbsp hot sauce e.g., Frank's or Sriracha
  • 1 tsp apple cider vinegar
  • 1 tsp red chili flakes adjust to taste
Toppings
  • 0.5 cup feta cheese crumbled
  • 2 tbsp fresh parsley chopped

Equipment

  • Large Oven-Safe Skillet or Baking Dish
  • Small saucepan
  • Meat thermometer

Method
 

  1. Preheat oven to 400°F (200°C). Pat chicken dry.
  2. Mix paprika, garlic powder, salt, and pepper. Rub over chicken breasts.
  3. Sear chicken in olive oil in a skillet over medium-high heat for 3-4 mins per side until golden. Transfer to baking dish if skillet isn't oven-safe.
  4. In a saucepan, melt butter. Sauté minced garlic for 1 minute. Whisk in honey, hot sauce, vinegar, and chili flakes. Simmer 2 mins.
  5. Pour 2/3 of the sauce over the chicken. Bake for 15-20 mins until internal temp reaches 165°F.
  6. Remove from oven. Drizzle with remaining sauce. Top immediately with crumbled feta and parsley.

Notes

Buying a block of feta and crumbling it yourself results in a creamier texture than pre-crumbled cheese.
