- If ricotta appears watery, place it in a fine-mesh sieve or on paper towels for 10 minutes to drain excess liquid.
- In a food processor, combine the ricotta, olive oil, salt, pepper, and lemon zest. Blend for 1-2 minutes until completely smooth and creamy.
- Transfer the whipped ricotta to a serving bowl. Use the back of a spoon to create swirls and deep divots in the cheese.
- In a small saucepan over medium-low heat, combine honey, red pepper flakes, and apple cider vinegar.
- Heat until the honey is runny and just beginning to bubble at the edges. Remove from heat immediately.
- Pour the warm hot honey over the ricotta, ensuring it pools in the swirls.
- Garnish with fresh thyme leaves and serve immediately with crusty bread or crackers.
Notes
Serve with warm baguette or crackers. Leftovers can be refrigerated for up to 2 days.
