Ingredients
  

Tuna Salad Base
  • 2 cans (5oz) tuna drained well
  • 0.5 cup mayonnaise or half greek yogurt
  • 1 tsp lemon juice freshly squeezed
  • 0.5 tsp dried oregano
  • 0.25 tsp black pepper freshly cracked
Mix-ins
  • 1 cup cherry tomatoes halved or quartered
  • 0.5 cup black olives sliced
  • 0.25 cup red onion finely diced
  • 2 tbsp capers drained
  • 1 tbsp fresh parsley chopped
Serving
  • 4 large croissants sliced horizontally

Method
 

  1. Drain the tuna cans thoroughly to remove excess liquid.
  2. In a medium bowl, flake the tuna with a fork.
  3. Add mayonnaise, lemon juice, dried oregano, and black pepper. Mix until creamy and combined.
  4. Gently fold in the quartered cherry tomatoes, sliced black olives, diced red onion, capers, and parsley.
  5. Taste and add salt if needed (the olives and capers add saltiness, so taste first).
  6. Slice croissants horizontally.
  7. Scoop a generous amount of salad onto each croissant and serve immediately.

Notes

For a lower calorie version, serve in lettuce cups or on cucumber slices.
