Ingredients
  

The Meatloaf
  • 2 lbs ground chicken
  • 1 cup panko breadcrumbs
  • 0.5 cup milk whole milk preferred
  • 0.5 cup parmesan cheese grated
  • 0.5 cup mozzarella cheese shredded, for inside
  • 1 large egg beaten
  • 1 small onion grated or finely minced
  • 4 cloves garlic minced
  • 0.25 cup fresh parsley chopped
  • 1 tsp Italian seasoning
The Topping
  • 0.5 cup mozzarella cheese shredded
  • 2 tbsp butter melted

  • Baking sheet
  • Large mixing bowl
  • Parchment paper

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, mix breadcrumbs and milk. Let sit for 5 minutes to form a paste.
  3. Add ground chicken, parmesan, 1/2 cup mozzarella, egg, onion, garlic, parsley, and seasonings to the bowl.
  4. Mix gently with hands until just combined. Do not overmix.
  5. Shape mixture into a loaf on the baking sheet.
  6. Bake for 40 minutes.
  7. Brush loaf with melted butter and top with remaining mozzarella. Bake another 10-15 minutes until cheese is browned and internal temp is 165°F.
  8. Let rest for 10 minutes before slicing.

Notes

Grating the onion instead of chopping it adds extra moisture to the loaf. Wet your hands before shaping to prevent sticking.
