Juicy Greek Chicken Burgers

Ingredients
  

Burger Mixture
  • 1 lb ground chicken
  • 0.5 cup feta cheese crumbled
  • 1 cup fresh spinach finely chopped
  • 0.25 cup red bell pepper finely diced
  • 2 tbsp red onion grated or finely minced
  • 2 cloves garlic minced
  • 1 tbsp fresh oregano chopped
  • 0.5 cup panko breadcrumbs or almond flour for GF
  • 1 egg large
  • 1 tbsp olive oil plus more for cooking
For Serving
  • 4 brioche buns toasted
  • 0.5 cup tzatziki sauce

Method
 

  1. Prepare the vegetables: Finely chop the spinach and red pepper. Grate the onion and mince the garlic.
  2. In a large bowl, combine ground chicken, crumbled feta, spinach, pepper, onion, garlic, oregano, breadcrumbs, egg, and 1 tablespoon olive oil.
  3. Season with black pepper and a pinch of salt (go easy on salt as feta is salty).
  4. Gently mix with your hands until just combined. Do not overmix.
  5. Divide mixture into 4 equal portions. With damp hands, shape into patties about 3/4 inch thick.
  6. Heat oil in a large skillet over medium-high heat (or preheat grill).
  7. Cook burgers for 5-6 minutes per side, or until golden brown and internal temperature reaches 165°F (74°C).
  8. Remove from heat and let rest for 5 minutes before serving on buns with tzatziki.

Notes

If using frozen spinach, thaw completely and squeeze out all excess liquid before adding to the mixture.
