Ingredients
  

Botanical Tea Base
  • 2 cups water boiling, then rested for 30 seconds
  • 2 tbsp dried blue lotus flowers
  • 1 tbsp culinary-grade dried lavender buds
  • 2 tbsp raw honey or agave syrup
  • 0.5 medium lemon juiced
Assembly & Garnish
  • 2 cups premium tonic water or sparkling water
  • 2 cups ice cubes large clear ice preferred
  • 2 sprigs fresh lavender for garnish
  • 2 slices lemon wheels for garnish

Equipment

  • Heat-safe glass pitcher or teapot
  • Fine-mesh sieve
  • Highball or coupe glasses

Method
 

  1. Bring the water to a boil, then remove from heat and let rest for 30-60 seconds to slightly lower the temperature.
  2. Place the dried blue lotus flowers and lavender buds into a heat-safe pitcher. Pour the hot water over the botanicals.
  3. Cover and steep for 7 to 10 minutes. Do not over-steep to avoid bitterness.
  4. Strain the liquid through a fine-mesh sieve into a clean container. Discard the spent flowers.
  5. While the tea is warm, stir in the honey or agave until completely dissolved. Chill the mixture in the refrigerator for 30 minutes.
  6. Once completely chilled, stir the fresh lemon juice into the tea base and watch the color transform from deep purple to bright magenta.
  7. Fill two glasses with ice. Pour the botanical tea evenly between the two glasses, filling about halfway.
  8. Top each glass with tonic water. Give a gentle stir, garnish with a lemon wheel, fresh lavender, and a blue lotus petal. Serve immediately.

Notes

The tea concentrate can be made up to 3 days in advance and stored in the fridge. Wait to add the lemon juice until right before serving for the freshest flavor and brightest color presentation.
