Ingredients
  

Cream Base
  • 0.5 cup raw cashews soaked for 30 minutes in hot water
  • 1 cup unsweetened non-dairy milk almond, coconut, or cashews
  • 0.25 cup fresh lemon juice
  • 1 tbsp fresh lemon zest
  • 3 tbsp natural liquid sweetener maple syrup, honey, or agave
  • 0.5 tsp vanilla extract
  • 0.125 tsp salt a pinch
Chia Mixture
  • 6 tbsp chia seeds white or black

Method
 

  1. Place raw cashews in a bowl and cover with hot water; soak for 30 minutes until soft, then drain.
  2. Combine soaked cashews, milk, lemon juice, lemon zest, sweetener, vanilla extract, and salt in a high-speed blender and blend on high until perfectly smooth and creamy.
  3. Pour the cream base into a mixing bowl. Whisk in the chia seeds vigorously for 1-2 minutes until no clumps remain.
  4. Distribute the pudding into 2 individual serving jars.
  5. Cover and chill in the refrigerator for at least 2 hours, or preferably overnight, until set. Stir after 30 minutes of chilling to ensure a uniform texture.
  6. Serve cold, garnished with your favorite toppings.

Notes

Soaking cashews is crucial for a smooth cream base. For a variation, blend in fresh blueberries or replace some milk with Greek yogurt for a protein boost.
