Ingredients
  

Cookie Dough
  • 1 cup unsalted butter softened
  • 0.67 cup granulated sugar
  • 2 egg yolks large
  • 1 tbsp lemon zest freshly grated
  • 1.5 tsp dried culinary lavender finely chopped or crushed
  • 2.25 cups all-purpose flour
  • 0.5 tsp salt
Filling
  • 0.5 cup jam or curd blackberry, blueberry, or lemon

Method
 

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a small bowl, rub the lemon zest and dried lavender into the granulated sugar with your fingertips until fragrant.
  3. In a large bowl, cream together the softened butter and the infused sugar mixture until light and fluffy, about 2-3 minutes.
  4. Beat in the egg yolks, one at a time, until fully incorporated.
  5. In a separate bowl, whisk together the flour and salt. Gradually add this to the wet ingredients, mixing on low speed just until combined. Do not overmix.
  6. Shape the dough into 1-inch balls and place them on the prepared baking sheets, spaced about 2 inches apart.
  7. Using your thumb or the back of a small spoon, make an indentation in the center of each cookie.
  8. Fill each indentation with about 1/2 teaspoon of jam or curd.
  9. Bake for 12-15 minutes, or until the cookies are set and the bottoms are lightly golden.
  10. Allow cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Ensure you use culinary-grade lavender. For a finer texture, you can process the lavender and a small amount of sugar in a spice grinder before adding it to the main sugar batch.
